Humphrey's Carob Products contain absolutely no dairy. If you are allergic to dairy, Humphrey's Carob Products are a great and tasty option for you!

Humphrey’s Carob Bars contain barley malt and, therefore, cannot be labeled as gluten-free. The barley malt in Humphrey’s Carob Bars should not pose a problem for most people, however, if you are highly sensitive to gluten or have Celiac disease, you should not consume Humphrey’s Carob Bars.

Carob is a sweet-tasting substance native to the Mediterranean region, harvested from the pulp of dark-brown pods that grow on a flowering evergreen tree known as the Locust (carob) tree. After drying, the carob pulp is roasted and ground into a powder that can be used in the same way that one would use cocoa powder. Carob is available in several forms: powder, chips, carob syrup, carob molasses, and delicious culinary confections, such as Humphrey’s Carob Bars and Humphrey’s Wonderful Carob Peanut Clusters.

Both carob and chocolate come from pods that grow on trees, but each is native to different regions of the world. When processed into powder, they look quite similar, but the taste and texture are uniquely different. Carob is naturally sweeter than chocolate, and unlike chocolate, contains no caffeine or theobromine, is fat-free, high in fiber, contains health-enhancing polyphenols, has about three times as much calcium as chocolate, and is higher in B vitamins than chocolate.  Cocoa, from which chocolate is made, also contains oxalates, which reduce the ability to absorb calcium, but carob is free of oxalates. Carob powder or carob chips can easily be substituted in recipes that call for cocoa powder or chocolate chips.

Because carob is rich in insoluble fiber, it has a beneficial effect on the digestive system. Since it does not contain caffeine or theobromine, carob is non-irritating to the digestive tract and is a healthier choice for people who have gastrointestinal disorders.

Carob is also a beneficial alternative for people who suffer with high blood pressure and high cholesterol. In one study, the consumption of carob pulp lowered cholesterol in people with high cholesterol levels. https://www.ncbi.nlm.nih.gov/pubmed/14569404. Another study found that volunteers who consumed insoluble carob fiber had a lower total cholesterol and LDL cholesterol levels at the end of the study, but those in the placebo group (those who did not consume the fiber) did not see a cholesterol-lowering effect.

Many people who are allergic to chocolate or dairy products can enjoy Humphrey’s Carob Bar without risk of an allergic reaction. In a recent scientific study carob was shown to increase stamina in marathon athletes.

Note: The health benefits of carob are found in the natural carob pulp or plain carob powder—without added fat, salt, or sugar, substances that are not healthy when consumed in large quantities. While carob candy is a healthier alternative, please be conscious of portion sizes, read labels carefully, and consume these delightful treats in moderation.

Chocolate contains a substance called theobromine, which is very toxic to dogs. If a dog consumes too much chocolate, it can be fatal. Carob, however, is totally safe for dogs, and the chocolate-like treats that you find in the pet store are actually made from carob. And dogs love it! Cocoa, our little brown and white Shih-Tzu, loved Humphrey’s Carob Bar and would go crazy for small bites of these sweet treats whenever we offered them to her. Carob candy is perfectly safe for pets. Remember to buy an extra one for your four-legged friend (don't forget, a little goes a long way)!

Yes. All ingredients used in Humphrey's Carob Products are from plant sources and contain no animal products whatsoever.

 Humphrey's Carob Bar does not contain milk chocolate, and when melted, it has different physical characteristics than chocolate. Humphrey's Carob Bar is made without hydrogenated oil. It contains palm kernel oil, which has a melting temperature of 88 degrees. Because we do not use stabilizers, palm kernel oil tends to separate from other ingredients when melted. This is usually noticed when the candy bar is placed back into refrigeration. After being melted and then refrigerated again, the palm kernel oil will usually show up as light, random streaks. The candy is not spoiled and the taste does not change when it is melted and then cooled again.

Below is a list of stabilizers used in many foods. Humphrey’s Carob products do not contain any of these. Stabilizers were introduced into the market because 20th-century manufacturers had to find ways to make their products continue to look good, no matter what happened to them after the customer purchased them. Stabilizers help to prevent the separation of certain ingredients, such as sugars and fats, and prevent the formation of water molecules. Stabilizers give an illusion of higher quality to the product. Since we as consumers are used to judging quality with our eye and not with our microscope, we have accepted a certain standard.
