Both carob and chocolate come from pods that grow on trees, but each is native to different regions of the world. When processed into powder, they look quite similar, but the taste and texture are uniquely different. Carob is naturally sweeter than chocolate, and unlike chocolate, contains no caffeine or theobromine, is fat-free, high in fiber, contains health-enhancing polyphenols, has about three times as much calcium as chocolate, and is higher in B vitamins than chocolate. Cocoa, from which chocolate is made, also contains oxalates, which reduce the ability to absorb calcium, but carob is free of oxalates. Carob powder or carob chips can easily be substituted in recipes that call for cocoa powder or chocolate chips.
